It needs to be made with raw organic cabbage Ingredients: • 1 head cabbage • 1 tablespoon sea salt or pink salt per medium size head of cabbage (actual measurements are 3tb of salt per 5 lbs of cabbage) Note: Don’t use table salt it’s terrible for you and wont’ work. • Extra Brine: If you need extra brine: 1 additional tablespoon of sea salt and 4 cups pure water • Mason jar Optional spice: • 3 cloves of garlic • Coriander • Parsley Directions: - Remove any wilted outer leaves. - Remove 1 extra leaf per jar to hold down the sauerkraut below the brine. - Shred the head of cabbage – the thinner the better - Next put it in a bowl in layers with salt and garlic - Let sit for about 30 minutes so the salt can get the liquid out - Then mash, kneed and press, let sit another 10 minutes. When you do this you’re making the brine as the water comes out of the cabbage. - Then put the cabbage in jar, press down tight, to be sure it’s submerged under water. If you don’t have enough water you can add water with salt, it’s 1 tablespoon per 4 cups of water and just add what you need. - Leave at room temp out of light on a dish. - Burp the jar every few days - You can eat this after 3 days, but Let sit for at least a week but preferably 2 to 4 and it can stay in the fridge for 6 months. The Longer it sits better it tastes. It also has vitamin D2, which is actually an inhibitor of D3, which is the important vitamin D that we need to get. Ingredients for Almond Milk: 1 cup soaked almonds – Soak raw almonds over night in pure water, then throw out the water. 3-4 cups pure water 2 dates soaked (you can also use honey or stevia) Make sure you cut out the pits from there. 1 pinch of pink salt - http://amzn.to/2jZjTcq Blend ingredients for a minute Strain in nutmilk bag or fine hole strainer. I like to buy the dates with the pits as they maintain the nutrients - 2 cups of almonds – If you prefer you can use any nuts you like, I’ve seen these with pistachios or pecans or cashews if you like those better. - Next we put ¼ cup raw cacao powder – - ¾ cup unsweetened coconut ¼ cup goes in the mix and we save ½ cup for rolling) - ¼ tsp pink salt – this enhances the flavor of chocolate and adds great minerals - ½ tsp vanilla extract for taste - 1-2 tablespoons unsweetened almond milk. If this is not sticky enough to roll into balls add more almond milk about a tablespoon at a time mixing it until it is sticky enough. Then just roll them into balls and add the coconut flakes and your done. If you don’t like coconut you can also add hemp seeds or any shredded nuts. I’ve stored these in the fridge for more than a week and they were still good to go. How to Make Hemp Milk and Hemp Pudding Making hemp milk is fast and simple and way healthier for you than commercial brands because there is no added ingredients. Normally soaking and sprouting is done to remove the enzyme inhibitors such as phytic acid which is not present in hemp seeds so they are easily digested without soaking. Blend ingredients Add the hemp seeds and pure water into a blender. I use 2 dates soaked overnight in pure water just to soften them up and to bring out the sweetness, just remember to take out the seed. You don’t have to strain the hemp nuts when completed but if you do, add the honey or maple syrup after straining so it doesn’t get caught up in your bag. Finally a pinch of pink salt (1/8 teaspoon) as a preservative and this adds minerals as well. That’s all you need and it will taste great if you want it chocolate milk just add a teaspoon of raw cacao. Blend this for about 2 minutes - You can also add a tablespoon of matcha tea or chai tea to the milk for a healthy pick-me-up. - I also add some raw cacao and chia seeds to it for an awesome breakfast pudding. Hemp Pudding Ingredients: - 1 cup hemp milk - 3 tablespoons chia seeds http://amzn.to/2io9x64 - 1 teaspoon raw cacao http://amzn.to/2jJ6tgX - 1 teaspoon vanilla extract or vanilla powder/ or honey/ or maple syrup/ or stevia Straining the Hemp Nuts I don’t strain the hemp nuts, but if you do strain them, I recommend using these nut milk bags made with natural fibers like cotton and hemp rather than nylon which is bad for us and the environment If you strain, you can save the strained seeds for smoothies, my homemade pancake recipe, homemade ice cream, salads, as a body scrub, or just throw them in your garden as a compost since they are so nutrient dense. Just refrigerate them if you don’t use them right away. Ingredients for Homemade Chicken Broth 1- 3 whole free-range chicken or 2 to 3 pounds of bony chicken parts, such as necks, backs, breastbones, and wings Gizzards from one chicken (optional) 2-4 chicken feet or head if you can get it. One bunch cilantro also added in last hour. The addition of vinegar is important to notice. Fats ideally combine with acids like vinegar, but when it comes to making broth, the vinegar helps leech the valuable minerals from the bones. Cooking Instructions Fill up a large stockpot (or large Crockpot) with pure, filtered water. (A Crockpot is good for safety if you have to leave home while it’s cooking.) Add vinegar and all vegetables except parsley and cilantro to the water. I like kale, dandelion, carrots, celery, union and garlic. Cilantro and parsley can be added at the end. The vinegar is very important since it helps to extract the mineral from the carcus of the chicken. Place the whole chicken or chicken carcass into the pot. Bring almost to a boil, and remove any scum that rises to the top. (This is said to toxins in the body of the chicken.) Reduce the heat to the lowest setting and let simmer. If cooking a whole chicken, the meat should start separating from the bone after about 2 hours. Simply remove the chicken from the pot and separate the meat from the bones. Place the carcass back into the pot and continue simmering the bones for another 12-24 hours and follow with step 8 and 9. If cooking bones only, simply let them simmer for about 24 hours. Sally Fallon (author of nourishing traditions) suggests adding the fresh parsley about 10 minutes before finishing the stock, as this will add healthy mineral ions to your broth. Remove remaining bones from the broth with a slotted spoon and strain the rest through a strainer to remove any bone fragments. It makes for a nutty flavor. Just don’t use Soy – it’s unhealthy even when it’s non-GMO. Flavor with: Organic Ceylon C Raw Cacoa Dates That’s it! All 4 ingredients in here are excellent! Second Regarding Time Instead of adding just a little milk, fill up a mason jar with the half regular milk and half non-dairy milk straining it and refilling for about 3 days, storing the extra kefir you don’t eat in the refrigerator. You will then go through about a gallon of milk in 3 days. That’s enough kefir for about a week for one person with 16 cups of milk in a gallon. Add the cinnamon, cacao and dates, and continue to full up your bottle in the fridge only eating about 2-3 cups per day. Then when you get to your last bit of the gallon, put a cup or 2 of milk in the mason jar with the grains, cover it with cloth and put that in the refrigerator as if you were going away for a week. This will put the grains to sleep until you are ready to reactivate them by taking the jar with the grains out of the refrigerator. Making a Vegan Milk Kefir: Vegans often ask me if they can use just non-dairy milk. There are 2 ways to do this: 1. Strain your kefir grains out of the dairy milk and place them into just coconut milk. The grains will eat the sugar in the coconut milk, but lactose from regular milk is what sustains and nourishes them. So you could get about 7 to 14 days probably out of just coconut milk. Then you have to put them back in the regular milk for a couple of days, straining them every day for 2 or 3 days to revitalize them. Then start the cycle again with your coconut milk. The good news is the grains multiply fast especially in the summer, so you can put some aside for experimentation. 2. Another way to make this totally vegan is by using water kefir grains – see my video on that here and after making the water kefir add coconut and/or nut milk to the second ferment. - Use a ¼ cup of water kefir with 1 quart of non-dairy milk. Then add whatever fruit you want to make it taste great. But it’s a misconception that speed is the only way to hit that. I prefer steaming because boiling has been shown to negatively impact the enzymes in them. The easiest way to steam is by putting it all in a pot, add ¾ cup of filtered water just to cover the bottom of the pan since we’re just steaming, put on low, with the lid on for 10-12 minutes. You know they’re done if you can easily put the fork in and pull the fork out. Now you want these as dry as possible since they absorb water like a sponge and excess water will make them runny. Then add - 1-tablespoon olive oil - ½ cup of butter or ghee. You could also use Greek yogurt or sour cream or even cream cheese. - ½ teaspoon of Himalayan salt - ¼ teaspoon ground pepper 1 clove chopped sautéed garlic and half an onion. I like to sauté them in ghee or coconut oil with rosemary first for about 3 minutes. An easier option is ½ teaspoon of garlic powder At this point you can put this all in a food processor and mix, for me that makes it a little too creamy, so I prefer to mash them old fashion style and have a little lumpy. Now, add some parsley and you have an awesome cauliflower garlic mashed. Great all by itself! Part 2 – Twice bake it! Preheat the oven to 400 degrees Add 2/3 cup of shredded cheese. Can be a mix of cheese as well if you like. I’m going to use cheddar. Now if you like I like to add a few herbs to this since it’s an easy way to get them in your system. I put fennel, cumin, coriander, and turmeric. I/2 teaspoon of each and you will barely notice them especially if the garlic is in there. Put some coconut oil on the dish, pour it in there bake in the oven at 400 for 45 minutes. Slice carrots lengthwise and boil for 10-20 minutes. Then put in a strainer to remove water. 2. Lay the slices of eggplant on paper towels, sprinkle lightly with salt, and set aside for 30 minutes to draw out the moisture. Then in a skillet over high heat, heat the olive oil. Quickly fry the eggplant until browned. Set aside on paper towels to drain oil. 3. Do the same with the potatoes and zucchini. 4. (Optional for meat) In a large skillet over medium heat, melt the butter and add the ground beef, salt and pepper to taste, onions, and garlic. After the beef is browned, sprinkle in the cinnamon, nutmeg, fines herbs and parsley. Pour in the tomato sauce and wine, and mix well. Simmer for 20 minutes. Allow to cool, and then stir in beaten egg. 5. To make the béchamel sauce, begin by scalding the milk in a saucepan. Melt the butter in a large skillet over medium heat. Whisk in flour until smooth. Lower heat; gradually pour in the hot milk, whisking constantly until it thickens. Season with salt, and white pepper. 6. Arrange a layer of potato, zucchini, and eggplant in a greased 9x13 inch baking dish. Cover eggplant with carrots then béchamel sauce (meat mixture first if using that), and then sprinkle 1/2 cup of Parmesan cheese over the top. Lay out the layers or each adding cheese, tomato sauce, and nutmeg/salt/pepper as shown 7. Bake for 20-30 minutes until top is brown and cooked through (1 hour with meat at 350 degrees F (175 degrees C). 8. Let sit at least 20 minutes before serving. Béchamel Sauce: 1. Melt 50g of butter in a medium-size pot and add 5 x tablespoons of plain flour. 2. Mix continuously using a whisk until there are no lumps and the flour has dissolved. 3. Add salt and pepper and keep mixing, leaving it to cook and become creamy in texture. 4. While mixing, add 4 cups of milk and stir really well until the béchamel sauce thickens even more. 5. Using a double boiler, - Melt ½ cup Coconut oil, Shea butter, and - ¼ cup (4 Tbsp) beeswax together - (Optional 1/2 cup Cocoa butter) - ¼ cup of jojoba oil - 3 Tbsp Zinc Oxide Powder (Non-Nano Size) - Whip it good! - Up to 30 drops of Essential Oils – Lavender, Cedarwood, Raspberry Seed, Carrot Seed Oil 1. Using a double boiler, melt your coconut oil, shea butter and beeswax together. (use ½ cup coconut oil and ½ cup shea butter) You do those first because they have the hardest consistency and 4 tablespoons of beeswax, this adds to consistency and makes it water resistant. 2. Next after those are melted add ¼ cup of jojoba oil 3. next we're going to add 3 tablespoons of zinc oxide powder. Now, when getting this it’s very important to get non-nano size particles, so they don't enter your bloodstream. And Use a high-quality zinc oxide that is specifically for cosmetic applications. (I’ll have links in the blog for one's I like.) And Be careful not to inhale this when pouring it. This is the only ingredient that you cannot eat, but non-nano particles won't enter your bloodstream. 4. then to harden it a bit we're going to put it in the fridge for about 20 minutes so that we can whip it. 5. Then whip it well with a whisk, fork or a mixer. Now you can add essential oils. I like lavender and cedarwood because they are great for your skin but also adding raspberry seed and carrot seed oil helps to increase the SPF even higher since they have about a 30 spf by themselves. Avoid any citrus oils like lemon or orange since they are phototoxic meaning they magnify the sun and can cause damage. You can put up to 30 drops of any of these. This will have an spf of between 30 and 45 depending on how much zinc you use and how you apply it and I’ll talk more about that in the blog. SUNBURN: And if you forget your sunblock and get burned check out my video on how to cut and eat aloe leaf.
