Whether you are using red meat, poultry or seafood, substances in the muscle proteins of these foods react under high heat to form carcinogenic compounds called heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs) HCAS are mutagenic compounds. HCAs can damage the DNA of our genes, beginning the process of cancer development. HCAs may damage DNA and spur the development of tumors in cells of the colon, breast, prostate and lymph system. On the most basic level, the smoky flavor and the char that you get from a well-grilled steak is not particularly good for you. When cooking at temperatures of 350°F and hotter, fat from the cooking meat drips down on the hot coals, amino acids and creatine react and the smoke that forms contains PAH. And the charred exterior of the meat (or inside, if you like things extremely well-done) is chock full of HCA) (1,2) Studies: Both PAHs and HCAs have been linked (one conducted by the National Cancer Institute) that high consumption of well-done, fried, or barbecued meats was associated with increased risks of colorectal, pancreatic, and prostate cancer. In 2009, another study found that people who preferred their steaks very well done were 60% more likely to get pancreatic cancer than those who liked them bloody (or didn't eat steak at all) Other studies have found that grilling meats is associated with an increase in the likelihood of developing breast cancer (2,3) Solutions: A simple way to decrease formation of carcinogenic HCAs is to cook your meat at lower temperatures, like roasting it in the oven and stewing it. If you still want to grill, turn the gas down or wait for charcoal to become low-burning embers and grill leaner meat cuts that will drip less and cause fewer flare-ups and smoke. By raising the grilling surface from the heat source, you can also reduce black char that can form on meat. This char has a high carcinogen content. Either way, cooking via pan is safer than cooking via grill. Pan-frying is another method of cooking that you should do at a lower temperature. Research shows that frying meat at a higher pan temperature, which saves only two minutes of cooking time, produces three times the HCA content of meat cooked at medium temperatures. Research in the Journal of Agriculture and Food Chemistry showed that marinating red meat in beer or wine for two hours significantly reduced HCAs. Scientists believe the antioxidants in these marinades block HCAs from forming. Similarly, a Kansas State University study found that rubbing rosemary, an herb known for its high level of antioxidants, onto meats before grilling cut HCA levels by more than 90 percent. Pair grilled meats with vegetables, particularly cruciferous ones. In one study, men who ate about 2½ cups of Brussels sprouts every day for three weeks reduced their DNA damage significantly. Cruciferous vegetables, such as broccoli and cabbage, contain sulforaphane, a compound that may help the body clear DNA-damaging compounds more quickly. Grillers, take your marks! Memorial Day weekend is considered by many to be the official start of the summer grilling season. But recent research linking grilled meat and pancreatic cancer could drop the caution flag on some folks summer grilling. Experts say one reason for this cancer link is that the muscle proteins in beef, pork, chicken, even fish, can generate a cancer-causing reaction when they meet a hot grill. Denise Snyder, Duke nutrition researcher... All of these things are muscle proteins, and when we apply those high internal temperatures, it causes the proteins to break down and we actually can create a cancer forming substance, and that substance can cause some damage to our DNA and our genetic material. And that can start that cancer development process. While they dont expect picnickers to avoid grilling meats altogether, Duke nutritionists say there are simple steps grillers can take to lessen their exposure: *Flip meats often, about once every minute *Use thinner cuts of meat. These cook faster, equaling less time on the grill *Reduce grilling time by first partially cooking meats in the microwave *Marinating meats first can reduce the formation of cancer-causing substances on your meat *Lining your grill with foil with holes poked in it will allow juice to drip through, while lessening smoke flare-ups that can contain cancer-causing substances Perhaps most importantly, experts warn against blackening meat on the grill. You want to not have the chargrilled, blackened, crispy parts from the meats so that youre not getting exposure to those cancer-causing substances. And if you do happen to char a little of something, make sure to cut it off! Nutritionists add that barbecue lovers should minimize their consumption of processed meats like hot dogs and sausages. He stated that when protein levels in rats were at 20 percent, cancer genes were present and then the rats would eventually develop cancer. On the other hand, once the protein levels were reduced to 5 percent, the rats no longer get cancer. However, there are many misconceptions surrounding this study. For one, the rats that Campbell used in this study were exposed to casein protein. Casein is found in dairy, but dairy also contains an anti-cancer protein called whey. Naturally, the effects of casein would be offset by the anticancer effects of whey. Whether you’re grilling or cooking, health expert says you could be causing your body more harm than good. “Chemicals are formed when you cook meat, whether it’s chicken, beef or poultry over high heat. So frying it in a pan or grilling it in an open flame. These chemicals are called HCA and PAH for short,” explained Enza Locascio a dietitian with Lee Health. Studies show these chemicals are mutagenic, meaning they can cause changes in our DNA. Those changes can increase our risk for cancer. “Our body has specific enzymes that can break down HCA and PAH, but the activity of those enzymes varies from person to person thus that can vary our risk of developing cancer,” she said. There are ways you can reduce exposure to HCA and PAH. Avoid prolonged cooking times, continuously turn meat over when you’re cooking over high heat and remove any charred portions from the meat. “Meat is high in saturated fat and cholesterol, but according to the American Heart Association it’s still ok to have red meat just limit the amount,” said Locascio. But when it comes to choosing your meat, health experts recommend staying away from processed meats. “For example, hot dogs, bacon, and bologna. According to the American Institute for Cancer Research, these meats should be avoided and eating any amount regularly can increase your risks for certain kinds of cancers,” she said. Health experts encourage decreasing your meat intake and increasing your fruits and vegetables. “Plant-based foods contain phytochemicals. Those are compounds that protect us from and can even prevent disease,” said Locascio. Plant-based foods like beans, nuts and whole grains can also lower your risk of cancer and chronic disease. How?” Hi, this is Dr. John La Puma from ChefMD® answering the question of the week emailed to me from Dave in Tulsa, Oklahoma who writes: I am planning on doing massive grilling this summer but my dad was just diagnosed with colon cancer and is eating less meat. I hear you can marinate meat in wine and still grill. How? Dave, Excellent for you for being concerned about trying to reduce your own risk of colon cancer and I’m sorry to hear about your dad. The good news there is that your dad can actually change the rate of recurrence of colon cancer will what he eats. So my advice is for both you and him. This is how you can marinate in a plastic bag like this – wine, or almost any marinade. It really is simple. You put the meat that you are going to grill – and this is true for all meats (chicken and fish) because they all have animal protein in them and that is what can be turned into carcinogens if you grill without marinade. Simple pour the bottle – this is a raspberry vinaigrette which might be very nice on fish or pork for example. Simply pour it in and then seal it up with your meat. You can use wine if you like, but I like using something that has a little more flavor. You could add a little olive oil to the wine and some herbs as well. Place the meat in a grilling basket, add herbs like rosemary to make sure the antioxidants and anti-inflammatory agents around the meat are one’s that help protect it. Something else you can do is make sure your vitamin D is adequate. I looked at a study that followed more than half a million people for more than a decade. People with the highest blood levels of vitamin D at the start of the study had about a 40% decrease in their own colorectal cancer risk. So, if you don’t know your vitamin D level, get it measured. My recipe suggestion for you is my Citrus Marinated Mahi Mahi over warm lentils with almonds. http://www.chefmd.com/recipe_display.php?id=89 There, I marinate the fish in a citrus vinaigrette which helps protect it from the heat. The warm lentils, of course, reduce your risk of heart disease with their soluble fiber and their lowering of cholesterol as do the almonds. CANCER-CAUSING FOODS that CANCER Docs Never Eat! Every day there's some new warning about this food or that food maybe causing cancer—and soon enough that advice turns out to be bunk. We talked to oncologists to learn which foods may truly put us at risk. Processed meats are up there with smoking and asbestos when it comes to cancer risk, according to the World Health Organization. On their no-no list are sausage, bacon, hot dogs, and ham, due to an increased risk of colorectal cancer. Eating just 50 grams of processed meat each day (that's around two slices of ham) can increase the risk of colon cancer by 18 percent, according to the report. The problem comes not just from the meat itself but from the main methods of processing it, which include smoking, curing, or adding salt or preservatives. When cooking certain meats, sodium nitrites combine with natural amines in the meat to form cancer-causing N-nitroso compounds. "I avoid smoked foods due to nitrates," says Ioana Bonta, MD, a medical oncologist at Cancer Treatment Centers of America at Southeastern Regional Medical Center in Newnan, Georgia. In spite of similar preparation, smoked fish is not as bad as smoked meats, according to Cary Presant, MD, an internist, hematologist, and an oncologist in Los Angeles and an assistant Clinical Professor in the Department of Medical Oncology & Therapeutics Research at City of Hope Cancer Center in West Covina, California. Microwave popcorn "Microwave popcorn is loaded with artificial butter, and the fumes from it contain the toxic compound diacytel that is associated with lung cancers," says professor Eitan Yefenof, PhD, chairman of the Lautenberg Center for Immunology and Cancer Research at Hebrew University of Jerusalem in Israel. Also known as a "butter bomb," diacytel gives popcorn that distinctive buttery flavor and aroma. Farmed salmon Sure, it's cheaper than the wild-caught stuff, but farmed salmon has higher levels of potentially cancer-causing contaminants. On average, farmed salmon has 16 times the polychlorinated biphenyls (PCBs) found in wild salmon, four times the levels in beef, and 3.4 times the PCBs found in other seafood, the Environmental Working Group reports. Instead, "choose wild-caught salmon and bake it with heart-healthy olive oil, " suggests Steven G. Eisenberg, DO, an oncologist at the California Cancer Associates for Research and Excellence in San Diego. Salmon is rich in healthy fats known as omega-3 fatty acids, and when consumed in place of a high-fat protein source, it can help control weight. "Obesity is a major risk factor for many cancers." Other cancer-fighting foods can also help. Charred meats Crazy-high temperatures used in the grilling process produce cancer-causing heterocyclic aromatic amines and polycyclic aromatic hydrocarbons, which are carcinogenic. Dr. Eisenberg won't eat any red meat... ever, focusing instead on plant-based proteins and fish. The World Health Organization confirms that unprocessed red meat may also cause cancer. Dr. Bonta eats small amounts of red meat but cooks it carefully. "I don't believe in grilling red meat because of the heme-iron and charcoal also have cancer causing agents," she says. Follow these guidelines for healthier grilling. Artificial sweeteners Dr. Bonta won't even keep artificial sweeteners in the house due to #potentialcancerrisk. Dr. Eisenberg takes a more cautious approach to the use of sugar substitutes; choosing plant-based, no-cal Stevia instead of the sweeteners typically found in the blue, pink, and yellow packets. "Research into the potentially toxic effects of other artificial sweeteners is under way, so why not use something natural until we have sound research?" he asks. "We don't know what we will find out in the next 10 years." Here's what happens to your body when you go cold turkey on fake sugars. Excessive amounts of alcohol Dr. Eisenberg is a teetotaler. In fact, he hasn't had so much as a sip of alcohol since his college days. "The research linking alcohol to #cancerrisk is strong," he says. Clear patterns have emerged between alcohol consumption and the development of head and neck cancer, esophageal cancer, liver cancer, breast, and colon cancer, according to the National Cancer Institute. "Numerous studies have examined the association between alcohol consumption and the risk of other cancers, including cancers of the pancreas, ovary, prostate, stomach, uterus, and bladder," Dr. Eisenberg adds, noting that they've found either no association or that the evidence is inconsistent. If you're not ready to go completely dry, cutting back can be a good small step. These tips can make limiting alcohol easier.

We especially encourage you to remove the skin from the chicken before cooking. 2. Marinate meat for a few hours before grilling using ingredients that contain antioxidants, including onion, garlic, lemon juice, turmeric, cinnamon, virgin olive oil, and beer (non-alcoholic Pilsner). 3. Use all natural charcoal and avoid using lighter fluid. You may use cooking oil and a paper towel as an alternative to lighter fluid. 4. Clean your grill grates with an onion and oil the grill grates with paper towel and tongs. 5. Grill medium rare steak instead of well done. When the steak is well done, it has three times as much carcinogens when compared to medium rare steak. 6. Avoid charring your meat too much during grilling. When you're cooking kebabs, you may want to turn it more often for even cooking and to make sure that the meat is not burning on one side. Experts agree that adequate testing was not done before GMO foods were added to the ingredient listing of thousands of products. In other words, no one – including the growers and manufacturers of GMO foods – knows the long-term effect they will have on human health. Look for GMO-free labels whenever possible or buy organic (which always means a product is not genetically modified). Microwave Popcorn: From the chemically-lined bag to the actual contents, microwave popcorn is at the center of lung cancer debates around the world. Not only are the kernels and oil likely GMO (which the manufacturer does not have to disclose) unless organic, the fumes released from artificial butter flavoring contain diacetyl, which is toxic to humans. Make your own organic popcorn the old-fashioned way – it tastes better, doesn’t release toxic fumes, and is a healthier choice for you. Canned Goods: Most cans are lined with a product called bisphenol-A (BPA), which has been shown to genetically alter the brain cells of rats. Many plastic goods, thermal paper, water lines, and many dental composites also contain BPA. Help protect your DNA by sticking to fresh or frozen vegetables that have no added ingredients for your family’s table! These are better for you and available year-round. Grilled Red Meat: While grilled food can taste delicious, scientists have discovered that preparing meats in this way – especially processed meats like hot dogs – releases a carcinogen called heterocyclic aromatic amines. When you grill red meat to the point of well-done, it changes the chemical and molecular structure of the meat. You’re better off baking, broiling, or preparing meat in a skillet than on the grill. Refined Sugar: The biggest cancer causing food (by far) is high-fructose corn syrup (HFCS) and other refined sugars. Even brown sugar is highly refined white sugar with some of the removed molasses added back in for flavor and color. Refined sugars (and foods made with them) are the source of major insulin spikes and feed the growth of cancer cells. Since the majority of the sugar supply in the U.S. is made using genetically modified (GMO) sugar beets, a healthier option is organic honey, coconut sugar, or maple sugar. Now that oncologists are using diabetes medication to fight cancer cells, there’s no doubt (finally) that those mutated cancer cells love sugar. Salted, Pickled, and Smoked Foods: These products typically contain preservatives, such as nitrates, which are intended to prolong shelf life. The additives used in processed foods can accumulate in your body over time. Eventually, such toxins cause damage at the cellular level and lead to diseases like cancer. When smoked foods are cooked at high temperatures, the nitrates are converted to the much more dangerous nitrites. (Note: By pickled foods we don’t mean the fermented foods you make at home.) Soda and Carbonated Beverages: Sodas have been at the center of the health debate for two decades as a major cancer causing food. Filled with high-fructose corn syrup (HFCS), dyes, and a host of other chemicals, they are very bad for every aspect of your health. They provide zero nutritional value and rob your body of the nutrients you get from other foods. Adding “diet” to the label means you’re also likely consuming aspartame – which is no better than rat poison to human cells. White Flour: When flour is refined, all nutritional value is removed. Then it’s bleached with chlorine gas to make it more appealing to consumers. The glycemic index for white flour is very high – meaning it spikes your insulin levels without providing nutritional fuel. Carbohydrates are converted to sugars by your body, so excessive products that contain white flour can lead to increased insulin resistance. Simple sugars (like refined carbohydrates) are the preferred fuel source for cancer. Farmed Fish: Commercial fish farming involves raising an incredible number of fish (such as salmon), in a crowded environment. More than 60% of the salmon consumed in the United States comes from a farming operation where they are treated with antibiotics, pesticides, and other carcinogenic chemicals to try and control the bacterial, viral, and parasitic outbreaks that result from cramming so many fish in a small space. Farmed fish also don’t have as much omega-3 as wild salmon. Hydrogenated Oils: Vegetable oils are chemically extracted from their source, chemically treated, and more chemicals are added to change the smell and taste.

Despite her young age, the doctor said routinely staying up late and consuming a great deal of grilled food could be prominent factors contributing to her cancer. The doctor also pointed out that stress and unhealthy habits are two major factors which have increased incidents of stomach cancer in young adults nowadays.
