Whether you are using red meat, poultry or seafood, substances in the muscle proteins of these foods react under high heat to form carcinogenic compounds called heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs) HCAS are mutagenic compounds. HCAs can damage the DNA of our genes, beginning the process of cancer development. HCAs may damage DNA and spur the development of tumors in cells of the colon, breast, prostate and lymph system. On the most basic level, the smoky flavor and the char that you get from a well-grilled steak is not particularly good for you. When cooking at temperatures of 350°F and hotter, fat from the cooking meat drips down on the hot coals, amino acids and creatine react and the smoke that forms contains PAH. And the charred exterior of the meat (or inside, if you like things extremely well-done) is chock full of HCA) (1,2) Studies: Both PAHs and HCAs have been linked (one conducted by the National Cancer Institute) that high consumption of well-done, fried, or barbecued meats was associated with increased risks of colorectal, pancreatic, and prostate cancer. In 2009, another study found that people who preferred their steaks very well done were 60% more likely to get pancreatic cancer than those who liked them bloody (or didn't eat steak at all) Other studies have found that grilling meats is associated with an increase in the likelihood of developing breast cancer (2,3) Solutions: A simple way to decrease formation of carcinogenic HCAs is to cook your meat at lower temperatures, like roasting it in the oven and stewing it. If you still want to grill, turn the gas down or wait for charcoal to become low-burning embers and grill leaner meat cuts that will drip less and cause fewer flare-ups and smoke. By raising the grilling surface from the heat source, you can also reduce black char that can form on meat. This char has a high carcinogen content. Either way, cooking via pan is safer than cooking via grill. Pan-frying is another method of cooking that you should do at a lower temperature. Research shows that frying meat at a higher pan temperature, which saves only two minutes of cooking time, produces three times the HCA content of meat cooked at medium temperatures. Research in the Journal of Agriculture and Food Chemistry showed that marinating red meat in beer or wine for two hours significantly reduced HCAs. Scientists believe the antioxidants in these marinades block HCAs from forming. Similarly, a Kansas State University study found that rubbing rosemary, an herb known for its high level of antioxidants, onto meats before grilling cut HCA levels by more than 90 percent. Pair grilled meats with vegetables, particularly cruciferous ones. In one study, men who ate about 2½ cups of Brussels sprouts every day for three weeks reduced their DNA damage significantly. Cruciferous vegetables, such as broccoli and cabbage, contain sulforaphane, a compound that may help the body clear DNA-damaging compounds more quickly. You don't have to worry about these tips when grilling fruits and vegetables because they do not produce carcinogens during grilling. Here are the six tips: 1. Trim the fat from the meat. When fat drips onto the hot charcoal, it creates a flame, and produces carcinogenic smoke. It's important to remove as much fat as possible. We especially encourage you to remove the skin from the chicken before cooking. 2. Marinate meat for a few hours before grilling using ingredients that contain antioxidants, including onion, garlic, lemon juice, turmeric, cinnamon, virgin olive oil, and beer (non-alcoholic Pilsner). 3. Use all natural charcoal and avoid using lighter fluid. You may use cooking oil and a paper towel as an alternative to lighter fluid. 4. Clean your grill grates with an onion and oil the grill grates with paper towel and tongs. 5. Grill medium rare steak instead of well done. When the steak is well done, it has three times as much carcinogens when compared to medium rare steak. 6. Avoid charring your meat too much during grilling. When you're cooking kebabs, you may want to turn it more often for even cooking and to make sure that the meat is not burning on one side. CANCER-CAUSING FOODS that CANCER Docs Never Eat! Every day there's some new warning about this food or that food maybe causing cancer—and soon enough that advice turns out to be bunk. We talked to oncologists to learn which foods may truly put us at risk. Processed meats are up there with smoking and asbestos when it comes to cancer risk, according to the World Health Organization. On their no-no list are sausage, bacon, hot dogs, and ham, due to an increased risk of colorectal cancer. Eating just 50 grams of processed meat each day (that's around two slices of ham) can increase the risk of colon cancer by 18 percent, according to the report. The problem comes not just from the meat itself but from the main methods of processing it, which include smoking, curing, or adding salt or preservatives. When cooking certain meats, sodium nitrites combine with natural amines in the meat to form cancer-causing N-nitroso compounds. "I avoid smoked foods due to nitrates," says Ioana Bonta, MD, a medical oncologist at Cancer Treatment Centers of America at Southeastern Regional Medical Center in Newnan, Georgia. In spite of similar preparation, smoked fish is not as bad as smoked meats, according to Cary Presant, MD, an internist, hematologist, and an oncologist in Los Angeles and an assistant Clinical Professor in the Department of Medical Oncology & Therapeutics Research at City of Hope Cancer Center in West Covina, California. Microwave popcorn "Microwave popcorn is loaded with artificial butter, and the fumes from it contain the toxic compound diacytel that is associated with lung cancers," says professor Eitan Yefenof, PhD, chairman of the Lautenberg Center for Immunology and Cancer Research at Hebrew University of Jerusalem in Israel. Also known as a "butter bomb," diacytel gives popcorn that distinctive buttery flavor and aroma. There's more: The U.S. Environmental Protection Agency recognizes the perfluorooctanoic acid (PFOA) in microwave popcorn bag linings as "likely" carcinogenic. Need a popcorn fix? Here's how to make your own amazing popcorn in the microwave. Farmed salmon Sure, it's cheaper than the wild-caught stuff, but farmed salmon has higher levels of potentially cancer-causing contaminants. On average, farmed salmon has 16 times the polychlorinated biphenyls (PCBs) found in wild salmon, four times the levels in beef, and 3.4 times the PCBs found in other seafood, the Environmental Working Group reports. Instead, "choose wild-caught salmon and bake it with heart-healthy olive oil, " suggests Steven G. Eisenberg, DO, an oncologist at the California Cancer Associates for Research and Excellence in San Diego. Salmon is rich in healthy fats known as omega-3 fatty acids, and when consumed in place of a high-fat protein source, it can help control weight. "Obesity is a major risk factor for many cancers." Other cancer-fighting foods can also help. Charred meats Crazy-high temperatures used in the grilling process produce cancer-causing heterocyclic aromatic amines and polycyclic aromatic hydrocarbons, which are carcinogenic. Dr. Eisenberg won't eat any red meat... ever, focusing instead on plant-based proteins and fish. The World Health Organization confirms that unprocessed red meat may also cause cancer. Dr. Bonta eats small amounts of red meat but cooks it carefully. "I don't believe in grilling red meat because of the heme-iron and charcoal also have cancer causing agents," she says. Follow these guidelines for healthier grilling. Artificial sweeteners Dr. Bonta won't even keep artificial sweeteners in the house due to #potentialcancerrisk. Dr. Eisenberg takes a more cautious approach to the use of sugar substitutes; choosing plant-based, no-cal Stevia instead of the sweeteners typically found in the blue, pink, and yellow packets. "Research into the potentially toxic effects of other artificial sweeteners is under way, so why not use something natural until we have sound research?" he asks. "We don't know what we will find out in the next 10 years." Here's what happens to your body when you go cold turkey on fake sugars. Excessive amounts of alcohol Dr. Eisenberg is a teetotaler. In fact, he hasn't had so much as a sip of alcohol since his college days. "The research linking alcohol to #cancerrisk is strong," he says. Clear patterns have emerged between alcohol consumption and the development of head and neck cancer, esophageal cancer, liver cancer, breast, and colon cancer, according to the National Cancer Institute. "Numerous studies have examined the association between alcohol consumption and the risk of other cancers, including cancers of the pancreas, ovary, prostate, stomach, uterus, and bladder," Dr. Eisenberg adds, noting that they've found either no association or that the evidence is inconsistent. If you're not ready to go completely dry, cutting back can be a good small step. These tips can make limiting alcohol easier.

Top 10 Cancer Causing Foods to Cut Your Cancer Risk in Half Genetically Modified Foods (GMOs): The rapidly growing industry of genetically modified crops are infiltrating our food supply at an alarming rate. More than 90% of our corn and soy are now genetically modified. This fairly new practice is the source of many debates. Experts agree that adequate testing was not done before GMO foods were added to the ingredient listing of thousands of products. In other words, no one – including the growers and manufacturers of GMO foods – knows the long-term effect they will have on human health. Look for GMO-free labels whenever possible or buy organic (which always means a product is not genetically modified). Microwave Popcorn: From the chemically-lined bag to the actual contents, microwave popcorn is at the center of lung cancer debates around the world. Not only are the kernels and oil likely GMO (which the manufacturer does not have to disclose) unless organic, the fumes released from artificial butter flavoring contain diacetyl, which is toxic to humans. Make your own organic popcorn the old-fashioned way – it tastes better, doesn’t release toxic fumes, and is a healthier choice for you. Canned Goods: Most cans are lined with a product called bisphenol-A (BPA), which has been shown to genetically alter the brain cells of rats. Many plastic goods, thermal paper, water lines, and many dental composites also contain BPA. Help protect your DNA by sticking to fresh or frozen vegetables that have no added ingredients for your family’s table! These are better for you and available year-round. Grilled Red Meat: While grilled food can taste delicious, scientists have discovered that preparing meats in this way – especially processed meats like hot dogs – releases a carcinogen called heterocyclic aromatic amines. When you grill red meat to the point of well-done, it changes the chemical and molecular structure of the meat. You’re better off baking, broiling, or preparing meat in a skillet than on the grill. Refined Sugar: The biggest cancer causing food (by far) is high-fructose corn syrup (HFCS) and other refined sugars. Even brown sugar is highly refined white sugar with some of the removed molasses added back in for flavor and color. Refined sugars (and foods made with them) are the source of major insulin spikes and feed the growth of cancer cells. Since the majority of the sugar supply in the U.S. is made using genetically modified (GMO) sugar beets, a healthier option is organic honey, coconut sugar, or maple sugar. Now that oncologists are using diabetes medication to fight cancer cells, there’s no doubt (finally) that those mutated cancer cells love sugar. Salted, Pickled, and Smoked Foods: These products typically contain preservatives, such as nitrates, which are intended to prolong shelf life. The additives used in processed foods can accumulate in your body over time. Eventually, such toxins cause damage at the cellular level and lead to diseases like cancer. When smoked foods are cooked at high temperatures, the nitrates are converted to the much more dangerous nitrites. (Note: By pickled foods we don’t mean the fermented foods you make at home.) Soda and Carbonated Beverages: Sodas have been at the center of the health debate for two decades as a major cancer causing food. Filled with high-fructose corn syrup (HFCS), dyes, and a host of other chemicals, they are very bad for every aspect of your health. They provide zero nutritional value and rob your body of the nutrients you get from other foods. Adding “diet” to the label means you’re also likely consuming aspartame – which is no better than rat poison to human cells. White Flour: When flour is refined, all nutritional value is removed. Then it’s bleached with chlorine gas to make it more appealing to consumers. The glycemic index for white flour is very high – meaning it spikes your insulin levels without providing nutritional fuel. Carbohydrates are converted to sugars by your body, so excessive products that contain white flour can lead to increased insulin resistance. Simple sugars (like refined carbohydrates) are the preferred fuel source for cancer. Farmed Fish: Commercial fish farming involves raising an incredible number of fish (such as salmon), in a crowded environment. More than 60% of the salmon consumed in the United States comes from a farming operation where they are treated with antibiotics, pesticides, and other carcinogenic chemicals to try and control the bacterial, viral, and parasitic outbreaks that result from cramming so many fish in a small space. Farmed fish also don’t have as much omega-3 as wild salmon. Hydrogenated Oils: Vegetable oils are chemically extracted from their source, chemically treated, and more chemicals are added to change the smell and taste.

Ever since she entered university, 22-year-old undergrad, Xiao Ding (小丁), from Wuhan (武漢) in China's Hubei Province (湖北省) kept a reversed sleep schedule, sleeping during the day and staying awake at night. With her body clock all messed up, she started gaining weight, and decided to go on a diet. She refrained from eating during the day and then gorged herself on BBQ at night. The extreme weight loss method worked for a while, until last summer, when she started feeling nauseous and got a stomachache. After a medical examination, it turned out she had stomach cancer. Unfortunately, according to doctor Chen Jing (程晶教授) from the Cancer Center of Wuhan Union Hospital (武漢協和醫院), Xiao Ding's stomach cancer had already reached the terminal phase and was inoperable. Cancer cells had spread throughout Xiao Ding's abdomen. Despite her young age, the doctor said routinely staying up late and consuming a great deal of grilled food could be prominent factors contributing to her cancer. The doctor also pointed out that stress and unhealthy habits are two major factors which have increased incidents of stomach cancer in young adults nowadays. This is where many people base their whole decision on avoiding meat and becoming vegan or vegetarian off of the research of the china study. Most people don't realize the china study was based on surveys and was not a clinical study. T. Colin Campbell, an American biochemist, extrapolated that protein causes cancer. He stated that when protein levels in rats were at 20 percent, cancer genes were present and then the rats would eventually develop cancer. On the other hand, once the protein levels were reduced to 5 percent, the rats no longer get cancer. However, there are many misconceptions surrounding this study. For one, the rats that Campbell used in this study were exposed to casein protein. Casein is found in dairy, but dairy also contains an anti-cancer protein called whey. Naturally, the effects of casein would be offset by the anticancer effects of whey. In The China Study, the rats were only exposed to pure casein without the whey, which is why the rats developed cancer. This video offers to shed light to the belief that meat causes cancer. Scientists now estimate that 60 percent to 70 percent of cancers are all preventable through currently available information and simple changes in diet and lifestyle. ” With that encouraging statement in mind, this article addresses changes you can make in your day to day dietary lifestyle that will not only improve your health, but help you to avoid toxins that can increase your chance of cancer. Cured and Smoked Foods- Nitrates and nitrites act as preservatives to prevent food from spoiling, they also add color to meats. When cooked, nitrites and nitrates change into by-products called N-nitroso compounds, such as nitrosamines and nitrosamides. N-nitroso compounds are associated with an increased risk of cancer. Farmed Fish- According to Food and Water Watch, farmed fish contain higher levels of chemical pollutants than wild fish, including PCB, ’s a known carcinogen. Due to overcrowding in fish farms, fish are more susceptible to disease increasing the use of antibiotic use. They are also more susceptible to sea lice, which means they are also treated with pesticides. GMOs– Sadly GMOs (Genetically Modified Organisms) have infiltrated our food supply at an alarming rate. GMO foods should be avoiding. Look for GMO free labels on foods. Grilled Meat- Polycyclic aromatic hydrocarbons, or PAHs, are produced through certain types of combustion, such as the burning of coal or wood. An additional problem is created when fat from meat drips onto a fire, creating a flare up and smoke, this allows the PAHs to affix themselves to the food you’re cooking increasing your risk for carcinogenic exposure. Microwave Popcorn– These bags are lined with perfluoroalkyl, perfluorooctanoic acid (PFOA) and perfluorooctane sulfonate (PFOS) to prevent oil from soaking through the packaging. When heated, these chemicals leech into the popcorn; when ingested, they show up as blood contaminants. PFOA has been associated with tumors in animal organs (liver, pancreas, testicles and mammary glands in rats) , and increases in prostate cancer in PFOA plant workers. Non-Organic Fruits & Vegetables– Conventionally grown crops are grown with pesticides, herbicides, and GMO seeds. All of which are hazardous to your health. Processed foods– Cured meats tend to be high in nitrites and nitrates, preservatives that can, in large amounts, potentially increase your risk of stomach and other cancers. Processed foods are generally full of white flours, sugars, oils, colors, flavorings and other unhealthy ingredients. Refined Sugars- Researchers have found links between sugar and numerous issues such as unhealthy levels of blood fats, low HDL levels, increased risk for heart disease, higher blood triglyceride levels, obesity, immune suppression, arthritis and a host of other ills. Many of us are going to fire up that grill this coming July 4th. However, cooking meats at high temperatures can potentially develop carcinogenic compounds. And diets specifically high in red meats (beef, pork and lamb) increase the risk for colorectal cancer, and a regular intake of processed meats (bacon, sausage, hot dogs) can increase risks for colorectal and stomach cancers. Here are 3 tips on cancer prevention during this grilling holiday. 1. Decrease grilling time: cut large pieces of meat into smaller pieces so they cook more quickly. And consider partially cooking your meats on the stove or in the oven, then finish cooking them on the grill. 2. Trim off as much fat as possible to prevent flare ups from dripping grease and charring on meats from excess smoke. 3. Grill more veggies and fruits! These do not contain any cancer causing compounds. So this July 4th, consider filling at least 1/2 of your plate with low fat plant based foods. And overall, limit your red meat consumption to less than 18oz per week. Save those processed meats (sausage, bacon, hot dogs etc.) for only special occasions.
