Let's discuss the common-sense of this topic, and also the existing research. You probably know by now that the news media is in business to sell advertisements, not to give you the exact truth about a subject. If they can scare you or freak you out, and make you watch more, then they will do that, even if the topic is not actually scary at all. Your job as an adult is to decide for yourself what is actually a threat, and what is silly. Will grilling your meat cause cancer? I think not. Whether you are using red meat, poultry or seafood, substances in the muscle proteins of these foods react under high heat to form carcinogenic compounds called heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs) HCAS are mutagenic compounds. HCAs can damage the DNA of our genes, beginning the process of cancer development. HCAs may damage DNA and spur the development of tumors in cells of the colon, breast, prostate and lymph system. On the most basic level, the smoky flavor and the char that you get from a well-grilled steak is not particularly good for you. When cooking at temperatures of 350°F and hotter, fat from the cooking meat drips down on the hot coals, amino acids and creatine react and the smoke that forms contains PAH. And the charred exterior of the meat (or inside, if you like things extremely well-done) is chock full of HCA) (1,2) Studies: Both PAHs and HCAs have been linked (one conducted by the National Cancer Institute) that high consumption of well-done, fried, or barbecued meats was associated with increased risks of colorectal, pancreatic, and prostate cancer. In 2009, another study found that people who preferred their steaks very well done were 60% more likely to get pancreatic cancer than those who liked them bloody (or didn't eat steak at all) Other studies have found that grilling meats is associated with an increase in the likelihood of developing breast cancer (2,3) Solutions: A simple way to decrease formation of carcinogenic HCAs is to cook your meat at lower temperatures, like roasting it in the oven and stewing it. If you still want to grill, turn the gas down or wait for charcoal to become low-burning embers and grill leaner meat cuts that will drip less and cause fewer flare-ups and smoke. By raising the grilling surface from the heat source, you can also reduce black char that can form on meat. This char has a high carcinogen content. Either way, cooking via pan is safer than cooking via grill. Pan-frying is another method of cooking that you should do at a lower temperature. Research shows that frying meat at a higher pan temperature, which saves only two minutes of cooking time, produces three times the HCA content of meat cooked at medium temperatures. Research in the Journal of Agriculture and Food Chemistry showed that marinating red meat in beer or wine for two hours significantly reduced HCAs. Scientists believe the antioxidants in these marinades block HCAs from forming. Similarly, a Kansas State University study found that rubbing rosemary, an herb known for its high level of antioxidants, onto meats before grilling cut HCA levels by more than 90 percent. Pair grilled meats with vegetables, particularly cruciferous ones. In one study, men who ate about 2½ cups of Brussels sprouts every day for three weeks reduced their DNA damage significantly. Cruciferous vegetables, such as broccoli and cabbage, contain sulforaphane, a compound that may help the body clear DNA-damaging compounds more quickly. Most people don't realize the china study was based on surveys and was not a clinical study. T. Colin Campbell, an American biochemist, extrapolated that protein causes cancer. He stated that when protein levels in rats were at 20 percent, cancer genes were present and then the rats would eventually develop cancer. On the other hand, once the protein levels were reduced to 5 percent, the rats no longer get cancer. However, there are many misconceptions surrounding this study. For one, the rats that Campbell used in this study were exposed to casein protein. Casein is found in dairy, but dairy also contains an anti-cancer protein called whey. Naturally, the effects of casein would be offset by the anticancer effects of whey. According to studies done on human and animal cells, BPA has been linked to several health issues. These include cancer, infertility, obesity, and diabetes. 2 Smoked Foods: Smoked meats contain harmful carcinogens called nitrates and nitrites that help prevent it from spoiling. But when the smoked meat is cooked, those nitrates and nitrites turn into N-nitroso compounds which include nitrosamines and nitrosamides. N-nitroso compounds can increase your risk of developing cancer. 3 Farm Fish: A lot of the fish that you get at the grocery store come from a farm. You might think that it’s safer to get your fish from a farm instead of the wild. Unfortunately, you’d be mistaken. Fish contains high levels of omega-3. Wild fish get their omega-3 from the aquatic plants in the water. Farmed fish are fed an unnatural, high-corn diet which includes other pollutants and chemicals. Some of these chemicals also include pesticides which help prevent sea lice from spreading. 4 Grilled Meat: Nothing is better than cooking grilled meat under a nice fire. But what if I told you that this can increase your chances of getting cancer? Well, it’s true! Cooking meat under a fire can create carcinogenic compounds called heterocyclic amines and polycyclic aromatic hydrocarbons. According to research and studies done on animals, these dangerous chemicals have been shown to cause cancer. 5 Hydrogenated Oils: You increase your chances of developing breast cancer of you constantly consume hydrogenated oils. In order to prevent the product from going bad, manufacturers have processed the oil by creating a chemical reaction with hydrogen. 6 Microwaved Popcorn: The bags are lined with Perfluoroalkyls, perfluorooctanoic acid (PFOA) and perfluorooctane sulfonate (PFOS). These are used to prevent the oil from seeping through the package when it’s heating up. Unfortunately when you heat up the bagged popcorn, these chemicals end up in the popcorn. In many studies, PFOA has been associated with tumors in animal organs. You don't have to worry about these tips when grilling fruits and vegetables because they do not produce carcinogens during grilling. Here are the six tips: 1. Trim the fat from the meat. When fat drips onto the hot charcoal, it creates a flame, and produces carcinogenic smoke. It's important to remove as much fat as possible. We especially encourage you to remove the skin from the chicken before cooking. 2. Marinate meat for a few hours before grilling using ingredients that contain antioxidants, including onion, garlic, lemon juice, turmeric, cinnamon, virgin olive oil, and beer (non-alcoholic Pilsner). 3. Use all natural charcoal and avoid using lighter fluid. You may use cooking oil and a paper towel as an alternative to lighter fluid. 4. Clean your grill grates with an onion and oil the grill grates with paper towel and tongs. 5. Grill medium rare steak instead of well done. When the steak is well done, it has three times as much carcinogens when compared to medium rare steak. 6. Avoid charring your meat too much during grilling. When you're cooking kebabs, you may want to turn it more often for even cooking and to make sure that the meat is not burning on one side. Scientists now estimate that 60 percent to 70 percent of cancers are all preventable through currently available information and simple changes in diet and lifestyle. ” With that encouraging statement in mind, this article addresses changes you can make in your day to day dietary lifestyle that will not only improve your health, but help you to avoid toxins that can increase your chance of cancer. Cured and Smoked Foods- Nitrates and nitrites act as preservatives to prevent food from spoiling, they also add color to meats. When cooked, nitrites and nitrates change into by-products called N-nitroso compounds, such as nitrosamines and nitrosamides. N-nitroso compounds are associated with an increased risk of cancer. Farmed Fish- According to Food and Water Watch, farmed fish contain higher levels of chemical pollutants than wild fish, including PCB, ’s a known carcinogen. Due to overcrowding in fish farms, fish are more susceptible to disease increasing the use of antibiotic use. They are also more susceptible to sea lice, which means they are also treated with pesticides. GMOs– Sadly GMOs (Genetically Modified Organisms) have infiltrated our food supply at an alarming rate. GMO foods should be avoiding. Look for GMO free labels on foods. Grilled Meat- Polycyclic aromatic hydrocarbons, or PAHs, are produced through certain types of combustion, such as the burning of coal or wood. An additional problem is created when fat from meat drips onto a fire, creating a flare up and smoke, this allows the PAHs to affix themselves to the food you’re cooking increasing your risk for carcinogenic exposure. Microwave Popcorn– These bags are lined with perfluoroalkyl, perfluorooctanoic acid (PFOA) and perfluorooctane sulfonate (PFOS) to prevent oil from soaking through the packaging. When heated, these chemicals leech into the popcorn; when ingested, they show up as blood contaminants. PFOA has been associated with tumors in animal organs (liver, pancreas, testicles and mammary glands in rats) , and increases in prostate cancer in PFOA plant workers. Non-Organic Fruits & Vegetables– Conventionally grown crops are grown with pesticides, herbicides, and GMO seeds. All of which are hazardous to your health. Processed foods– Cured meats tend to be high in nitrites and nitrates, preservatives that can, in large amounts, potentially increase your risk of stomach and other cancers. Many cancers can be prevented by not smoking, maintaining a healthy weight, not drinking too much alcohol, eating plenty of vegetables, fruits and whole grains, not eating too much processed and red meat, and by avoiding many cancer causing foods that we have listed below. Microwave popcorn bags are lined with perfluorooctanoic acid, a compound that has been linked to various types of cancer, including liver, testicular and pancreatic cancer. Canned foods allow you to enjoy your favorite vegetables throughout the year. However, if you are concerned about your health, avoid canned food, especially canned tomatoes. The cans used to pack tomatoes and other foods are lined with a product called bisphenol A, BPA, an endocrine disruptor that may mimic or disrupt hormones and increase the risks for breast cancer, prostate cancer, early puberty, metabolic disorders, infertility, and several other problems. Farmed salmon is nowhere near as healthy as wild salmon, and eating farmed salmon puts you at a higher risk of developing cancer. Farm-raised fish are fed unnatural diets and contaminated with chemicals, antibiotics, pesticides and other known carcinogens found in materials like asbestos. Hydrogenated oils are vegetable oils, which cannot be naturally extracted like olive oil, soy or canola oil, they are chemically extracted from vegetables and is again chemically treated to change the smell and taste. This process turns unsaturated fat into a stable solid fat, resulting in trans fatty hydrogenated oil which is considered to be the worst type of fat and is known to cause cancer, heart disease, and immune system problems. Potato chips are deep-fried in temperatures above 120 degrees Celsius, which causes them to create a material called acrylamide, a well-known carcinogen found in cigarettes. Genetically modified foods (GMOs) are a rapidly growing industry and have made their way into the majority of our foods like corn, potatoes, grains and soybeans. Such food products are grown using harmful chemicals and, when consumed, can lead to immune system, brain and liver damage. Refined sugar, artificial sweeteners and fructose-rich sweeteners like high-fructose corn syrup are not good for your health. These products tend to rapidly spike insulin levels and feed the growth of cancer cells. Refined White flour contains excess carbohydrates that are not good for your health and even increase the risk of cancer. During the milling process, white flour is bleached with chlorine gas, which is highly toxic for the body. Processed meats such as ham, sausage and bacon have chemicals and preservatives like sodium nitrates, which make them bad for your health. But, here’s one healthy and delicious way to reduce your risk. Cooking meat using high temperature is known to create toxins known as heterocyclic amines, which have been associated to some cancers. Grilling meat can form compounds called PAHs and HCAs, which, according to the National Cancer Institute, cause changes in DNA, which may increase your cancer risk. Marinating lowers your risk through prevention of the formation of the toxins. But, 1 ingredient that makes a big difference is rosemary. Studies showed that adding rosemary to ground beef or other types of muscle meat before grilling, barbecuing, broiling or frying, significantly reduces heterocyclic amines.

Whether you’re grilling or cooking, health expert says you could be causing your body more harm than good. “Chemicals are formed when you cook meat, whether it’s chicken, beef or poultry over high heat. So frying it in a pan or grilling it in an open flame. These chemicals are called HCA and PAH for short,” explained Enza Locascio a dietitian with Lee Health. Studies show these chemicals are mutagenic, meaning they can cause changes in our DNA. Those changes can increase our risk for cancer. “Our body has specific enzymes that can break down HCA and PAH, but the activity of those enzymes varies from person to person thus that can vary our risk of developing cancer,” she said. There are ways you can reduce exposure to HCA and PAH. Avoid prolonged cooking times, continuously turn meat over when you’re cooking over high heat and remove any charred portions from the meat. “Meat is high in saturated fat and cholesterol, but according to the American Heart Association it’s still ok to have red meat just limit the amount,” said Locascio. But when it comes to choosing your meat, health experts recommend staying away from processed meats. “For example, hot dogs, bacon, and bologna. According to the American Institute for Cancer Research, these meats should be avoided and eating any amount regularly can increase your risks for certain kinds of cancers,” she said. Health experts encourage decreasing your meat intake and increasing your fruits and vegetables. “Plant-based foods contain phytochemicals. Those are compounds that protect us from and can even prevent disease,” said Locascio. Plant-based foods like beans, nuts and whole grains can also lower your risk of cancer and chronic disease. Welcome to the 4th video in a series in response to Kris Gunnar's of Authority Nutrition's article 8 Ridiculous Myths About Meat Consumption and Health. All Gunnars managed to do in this part of his article was show that processed meat is unhealthy, and if you look at the studies he links to, the last one shows that carbohydrate foods form the least carcinogenic compounds when cooked, than high fat foods and meat cause the most. The two review studies that he linked to that don’t show any correlation between red meat intake and colorectal cancer risk, are trumped by large studies that do show a link between red meat (and other animal sourced foods) and the risk of cancer. Additionally, while there are ways to cook meat that can reduce carcinogens, there are also carcinogens and other components in the meat that are there no matter how you cook the meat. It’s also not exclusive to red meat. Kris Gunnars is wrong to assert that red meat does not cause cancer. To reduce your risk of different types of cancers, it is best to avoid meat, dairy and eggs, and instead eat whole plant foods. It is well documented that dietary restriction of methionine significantly increases both the mean and maximum lifespan in the rodent model. Dietary restriction of methionine has also been shown to inhibit and even reverse human tumor growth in animal models and in culture demonstrating that tumors are methionine dependent, yet is relatively well tolerated by normal tissue. Red meat consumption has been associated in a Harvard study with an increased risk of total mortality, cardiovascular disease mortality, and cancer mortality.
