I hope you like all these easy healthy recipes♡ 1 Shrimp with peppers and zucchini recipe 230 calories (1 serving) Ingredients 3.5 oz shrimp (peeled and deveined) = 4.5 oz Shrimp Unpeeled 1/2 cup diced red bell pepper 1/2 cup diced yellow bell pepper 1/2 cup yellow onion, diced 1/2 cup zucchini, chopped 1 garlic cloves, diced Salt & pepper to taste Pinch of red pepper flakes 1 tsp Olive oil 1/8 tsp dried oregano Optional garnish: chopped parsley Preparation Add water and a slice of lime to a large stockpot set over medium heat. Bring to a boil and allow to boil for 5 minutes. Stir in the raw shrimp, cover and remove from heat. Allow to rest for about 4 minutes, until all the shrimp are cooked through. Pour the shrimp and liquid into a colander to strain, peel and set a side. On medium heat cook onions and bell peppers in skillet with 1 tsp of olive oil and garlic for about 1 minute. Add zucchini,cook and cover for about 10 minutes until zucchini is cooked, but still firm. Uncover and add the spices and mix well. Add the cooked shrimp and mix well. Remove from heat, garnish with parsley and serve hot 2 Cauliflower fried rice 240 calories (1 serving) Ingredients 1/4 cup onion diced 1/4 cup cup carrots diced 1 tsp olive oil 1 tsp salt 1/2 tsp ginger 1/8 tsp garlic powder 1/2 cup cauliflower, grated 2 eggs, beaten 1/4 cup Red bell pepper 1/4 cup Yellow bell pepper Preparation In a large pan, cook the onion and bell peppers in olive oil with ginger for about 1 minute on medium heat. Add carrots ,cook and cover for about 7-9 minutes until carrots is cooked. Uncover and add the spices and mix well. Add the cauliflower and cook for about 5 minutes. Spread the mixture towards the edge of the pan, creating a well in the center. Pour the beaten eggs into the well, stirring only the eggs until they are cooked then mix in. Take off the heat, and serve. 3 Creamy pasta with spinach recipe 330 calories (1 serving) Ingredients 2.5 whole wheat penne pasta uncooked 3 cups water 1/4 cup onion 1 cloves garlic 1 Tsp olive oil 4 oz can crushed tomatoes 1/8 tsp dried oregano 1/8 tsp dried basil pinch red pepper flakes (optional) salt pepper to taste 1 Tsp tomato paste 1 tbsp cream cheese 1 oz spinach 1 tbsp water Preparation Cook spaghetti according to package directions. On medium heat cook onions in skillet with 1 tsp of olive oil with garlic for about 1 minute. Add crushed tomatoes, tomato paste, and 1 tbsp water and stir until the tomato paste is dissolved into the sauce. Add the spices and mix well. Turn the heat down to low. add the cream cheese the tomato sauce and stir the sauce until the cream cheese has fully melted in and the sauce is creamy. Add the spinach and gently stir it into the sauce and coveruntil it has wilted (3 minutes). Uncover and add the pasta and stir until it is well coated in the creamy tomato sauce. Taste and adjust the salt and pepper as needed. Serve warm. 4 Taco rice recipe 350 calories (1 serving) Ingredients 1 tsp olive oil 1/4 cup diced onion 2 oz pound lean ground turkey 1/2 cup cooked brown rice 1/4 tsp taco seasoning (see below for taco seasoning) Salt and Black pepper 1/4 cup corn kernels 1/3 cups crushed tomatoes 1 tbsp grated cheddar cheese, reduced-fat 1/4 cup green onions *** Ingredientfor taco seasoning*** 1/4 tsp. Think of it as a lifestyle change and modification - this is not short term! It's changing your habits. 8. Don't focus on the calories you're consuming - focus on the quality calories you are consuming. 9. Give yourself the freedom to cheat 'every once-in-awhile' - indulge once or twice a week. Indulge doesn't mean going nuts and freakin' crazy. 10. If you fall off the weight-loss horse, dust yourself off and get back on - the successful people don't beat themselves off. If you are ONLY eating one a day with your other meals, you have options. 1. Cut the recipe in half, or 2. Put 4 meals in the freezer and 3 meals in the fridge. 3. Peel and set aside. Place lettuce on a bowl and, cucumber, beans, tuna, tomato and spring onion. In a small bowl whisk dijon mustard, garlic, black pepper, lemon juice and olive oil until smooth, then drizzle over salad, mix everything and serve immediately. 3 Broad beans with anchovies 150 calories (1 serving) Ingredients 1/2 cup canned or boiled broad beans 1 tsp olive oil 4 cherry tomatoes, halved 1 cup spinach chopped 1 garlic cloves, sliced 2 anchovy fillets, chopped 1 tsp parsley black pepper Preparation Heat the oil and garlic in a non-stick frying pan, add the chopped spinach and cook, cover till the leaves wilt. Uncover and add tomatoes and cover again for a couple minutes. Now add the beans and sauté for 1-2 minutes until heated through. Stir in the anchovies so they break up, season to taste with ground black pepper, then stir in parsley and serve. 4 Mixed Vegetables and Lentils recipe 350 calories (1 serving) Ingredients 1 cup water 1/4 cup lentils 1 tbsp lemon juice 3 oz tuna steak 1 tsp olive oil 1/4 cup carrots 1/4 cup suchini 1/4 cup red onion 1/4 tsp ground coriander 1/4 tsp ground pepper 1/4 tsp garlic powder 1/4 tsp ground cumin 1 tbsp water Pinch of salt Fresh parsley for garnish Preparation In a pot add water and bring to a boil. Reduce heat to maintain a simmer, add lentils and cover and cook until tender, 25 to 30 minutes. Drain, and set a side. Meanwhile, to prepare vegetables: Heat oil in a large skillet over medium heat. Add red onion, carrots, suchini and 1 tbsp water, stir and cover until vegetables are tender. Uncover and add salt pepper, garlic powder, coriander, cumin and stir. Push the vegetables to the side of thre pan to add tuna. Cook tuna until done and stir everything and cover for a couple minutes. Serve the vegetables over the lentils.
