This is the VOA Special English Health Report, from http://voaspecialenglish.com Vitamin D helps bones and muscles grow strong and healthy. Low levels of vitamin D can lead to problems like rickets and osteoporosis. Rickets is a deformity mainly found in children. Osteoporosis is the thinning of bone, a common problem as people, especially women, get older. Studies in recent years have suggested that vitamin D may also have other uses. Studies have shown that low levels of D may increase the risk of heart attacks in men and deaths from some cancers. Other studies have shown that people with rheumatic diseases often have low levels of D. The easiest way to get vitamin D is from sunlight. The ultraviolet rays react with skin cells to produce the vitamin. But many people worry about skin cancer and skin damage from the sun. So they cover their skin or wear sunblock or stay out of the sun. Also, darker skinned people produce less vitamin D than lighter skinned people. Production also decreases in older people and those living in northern areas that get less sunlight. Not many foods naturally contain vitamin D. Foods with high levels include oily fish such as salmon, tuna and mackerel, and fish liver oils. Boston University researchers reported in two thousand seven that farmed salmon had a lot less vitamin D than wild salmon. Small amounts of D are found in beef liver, cheese and egg yolks. And some people take dietary supplements containing the vitamin. But most of the D in the American diet comes from foods like milk with the vitamin added. These days, more doctors are testing for vitamin D levels in their patients. But as research continues, some experts worry that if people take too much D, it might act as a poison. Also, skin doctors warn people to be careful with sun exposure because of the risk of skin cancer. How much vitamin D does a healthy person need? Nutrition experts who advise the American government set the current recommendations in nineteen ninety-seven. The daily amount is two hundred international units from birth through age fifty. Then it rises to four hundred I.U.s through age seventy, and six hundred for those seventy-one and older. But some groups say these amounts are not high enough. The nutrition experts are taking another look at how much vitamin D and calcium people should get. The Institute of Medicine of the National Academies expects to release a report by this coming May. How To Improve Kidney Function In 10 Easy Steps OK, let’s begin shall we? 1. The Water Hydration Technique: You know how most of us generally go for long periods without water, become thirsty (and dehydrated) and scull the next available glass in about 30 seconds? Have you ever thought what this does to your body? No? I don’t blame you. The actual fact of the matter is that every time you a drink a glass of water (or any fluid) in a hurry, you are placing pressure on kidney function. How? Well, seeing as one of the functions of the kidneys is to keep the fluid levels in the blood stream balanced, by drinking a full glass of water at once you are essentially dumping a large amount of water into the blood stream, which the kidneys now need to balance out (i.e. increase urine production). By drinking slowly, a mouthful at a time, you reduce the pressure on the kidneys and increase hydration. Sound too simple to do any good? Good. Now try it. 2. Sunshine: As you are probably aware, when sunlight touches the skin, light sensitive receptor cells are activated to produce the active form of vitamin D. Vitamin D has many benefits in the body, the main benefits being: cancer prevention, immune system enhancement, bone health, and regulation of phosphorus and calcium levels (which is important in kidney disease). Did you know then that one of the key functions of kidneys is to active vitamin D too? True. By spending just 15 mins a day under the light of the sun, you can let the sun and your skin do all the work. Your kidneys will be saved the extra work, and at the same time you get to enjoy the open air. The other important thing to note is that if your kidney function has deteriorated too far, then your kidneys will not be able to produce enough active vitamin D anyway, making sunshine all the more necessary. Low levels have been linked to diabetes, kidney disease, cancer, and heart disease. People experiencing kidney disease, coupled with low vitamin D levels, have a 26 percent greater risk of dying than those with sufficient levels of vitamin D. Have your vitamin D levels tested with your next visit at your doctors: Optimal reference range for healthy individuals: – US measurement: 50 to 70 ng/mL – World measurement: 125 to 175 nmol/L Optimal reference range for treating heart disease, cancer, and kidney disease: – US measurement:70 to 80 ng/mL – World measurement: 175 to 200 nmol/L Is the sun shining where you are right now? 9 Healthy Foods That Are High in Vitamin D 1. Salmon Salmon is a popular fatty fish and also a great source of vitamin D. According to nutrient databases, one 3.5-oz (100-gram) serving of salmon contains between 361 and 685 IU of vitamin D (5). However, it is usually not specified whether the salmon was wild or farmed. This might not seem important, but it can make a big difference. One study found that wild-caught salmon contains 988 IU of vitamin D per 3.5-oz (100-gram) serving, on average. That's 247% of the Reference Daily Intake (RDI) (6). Some studies have found even higher levels in wild salmon, ranging up to 1,300 IU per serving (7). 2. Herring and Sardines Herring is a fish eaten around the world. It can be served raw, canned, smoked or pickled. It's also one of the best sources of vitamin D. Fresh Atlantic herring provides 1,628 IU per 3.5-oz (100-gram) serving, which is four times the RDI (8). If fresh fish isn't your thing, pickled herring is also a great source of vitamin D, providing 680 IU per 3.5-oz (100-gram) serving. That's 170% of the RDI. However, pickled herring also contains a high amount of sodium, which some people consume too much of (9). 3. Cod Liver Oil Cod liver oil is a popular supplement. If you don't like fish, taking cod liver oil can be a good way to obtain certain nutrients that are hard to get from other sources. At about 450 IU per teaspoon (4.9 ml), cod liver oil is an excellent source of vitamin D. It's been used for many years to prevent and treat deficiency in children (13, 14). Cod liver oil is also a fantastic source of vitamin A, with 90% of the RDI in just one teaspoon (4.9 ml). However, vitamin A can be toxic in high amounts. Therefore, it's best to be cautious with cod liver oil and not take more than you need. 4. Canned Tuna Many people enjoy canned tuna because of its light flavor and the fact that it can be kept on-hand in the pantry. It is also usually cheaper than buying fresh fish. Canned light tuna contains up to 236 IU of vitamin D in a 100-gram (3.5-oz) serving, which is more than half of the RDI. It is also a good source of niacin and vitamin K (15). Unfortunately, canned tuna is often associated with methylmercury, a toxin that is found in many types of fish. If it builds up in the body, it can cause serious health problems in humans (16). 5. Oysters Oysters are a type of clam that live in salt water. They are delicious, low in calories and full of nutrients. One 3.5-oz (100-gram) serving of wild oysters has only 68 calories, but contains 320 IU of vitamin D, or 80% of the RDI (18). In addition, one serving of oysters contains 2–6 times more than the RDI of vitamin B12, copper and zinc — far more than multivitamins contain. 6. Shrimp Shrimp are a popular type of shellfish. Yet unlike most other seafood sources of vitamin D, shrimp are very low in fat. Despite this fact, they still contain a good amount of vitamin D — 152 IU per serving, or 38% of the RDI (19). They also contain beneficial omega-3 fatty acids, although at lower amounts than many other foods rich in vitamin D. 7. Egg Yolks Luckily for people who don't like fish, seafood is not the only source of vitamin D. Whole eggs are another good source, as well as a wonderfully nutritious food. While most of the protein in an egg is found in the egg white, the fat, vitamins and minerals are found mostly in the egg yolk. One conventionally grown egg yolk contains between 18 and 39 IU of vitamin D, which isn't very high (7, 23). However, pasture-raised chickens that roam outside in the sunlight produce eggs with levels that are three to four times higher (24). 8. Mushrooms Excluding fortified foods, mushrooms are the only plant source of vitamin D. Similar to humans, mushrooms can synthesize this vitamin when exposed to UV light (26). However, mushrooms produce vitamin D2, whereas animals produce vitamin D3. Although vitamin D2 does help raise blood levels of vitamin D, it may not be as effective as vitamin D3 (27, 28). Nonetheless, wild mushrooms are excellent sources of vitamin D2. In fact, some varieties contain up to 2,300 IU per 3.5-oz (100-gram) serving (29). 9. Fortified Foods Natural sources of vitamin D are limited, especially if you're a vegetarian or don't like fish. Fortunately, some foods that don't naturally contain vitamin D are fortified with it. Cow's Milk Cow's milk, the type of milk that most people drink, is naturally a good source of many nutrients including calcium, phosphorous and riboflavin (31). In several countries, cow's milk is fortified with vitamin D. It usually contains about 130 IU per cup (237 ml), or about 33% of the RDI (32, 33).
