Beet green. Beet greens are young, leafy-tops of the beetroot plant. They are also a very good source of iron, vitamins B1, B6, and pantothenic acid, as well as phosphorus and protein. Beet greens are also a good source of zinc, folate and vitamin B3. Spinach. Spinach is an excellent source of vitamin K, vitamin A, manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, potassium and vitamin C. . It is a very good source of dietary fiber, phosphorus, vitamin B1, zinc, protein and choline. Additionally, spinach is a goood source of omega-3 fatty acids, niacin, pantothenic acid and selenium. Collard greens are an excellent source of vitamin-A (222% of RDA per 100 g) and carotenoid anti-oxidants such as lutein, carotenes, zea-xanthin, crypto-xanthin, etc. These compounds are scientifically found to have antioxidant properties.

All vegetables are healthy land products IF they're properly and naturally grown, meaning NO chemical fertiliser and pesticide used. This is true to all meats too. The animal must be raised also in a proper sanitary care. The food the animal eats must be natural and raised in its natural habitat.

My fruit have content of vitamin C 1520mg in 100grams of fruit. 1dekagram =10grams daily is sufficient for healthy people,others need more.Everyboady living in clima 3-8 of USDA clima scale can to plant it, when his country buy licence. It belong to specie actinidia kolomikta.It suit for privat gardens, not yet for large scale production. I usually get the Spring Mix, prepackaged lettuces but most of the packages do not state that the lettuces have all these nutrients. Watercress? Haven't seen it in stores or farmer's markets. I do not use/eat anything that is not Certified Non-GMO/Organic. I stay away from the sugar beets altogether because that crop is produced to make GMO sugar, the white, granulated stuff. Sugar beets are heavily sprayed with all kinds of pesticides and herbicides. Not everyone should eat chard. If you have kidney issues? Chard is one green to stay away from and its probably due to the amount of phosphorous found in the plant. I'm just a health nut since 1990, is all.

You've omitted Kale, Soybeans, and many other candidates. Chard and Beet Greens have nearly identical benefits if they are grown under the same conditions, so listing both is redundant. Spinach, though an excellent food, contains high levels of oxalic acid, which reduces bioavailability of calcium by binding Ca into calcium oxalate. Leaf lettuce varies greatly in nutritional value by type. Popular Iceberg lettuce is of very little nutritional value; dark green varieties of leaf lettuce are best. All leafy vegetables quickly lose most of their nutritional value during storage, even under refrugeration. In the absence of sufficient light for photosynthesis, the still living leaves draw upon their accumulated nutrients to survive.

some of the statistics are misleading. If 100 leaves of collard greens gives you 400% of your daily vitamin K then you need to eat 25 collard greens leaves a day to get your 100% daily allowance of vitamin K. 25 leaves is a big plateful!!

Vitamins and minerals are such a small part of what vegetables have to offer - each vegetable has other micronutrients that we aren't fully aware of yet so it's good to eat a wide variety of vegetables (and fruits).
